Years ago, my husband and I would drive an hour to buy a thin, crispy cookie from a small market in Michigan. When the company went out of business, I couldn’t stop thinking about them.
What started as a pandemic challenge to recreate the recipe turned into years of refining it and baking thousands of cookies for teachers, friends, and holidays.
About a year ago, I walked into a local coffee shop and asked if they’d carry them.
They said yes.
